🛒 Ingredients

  • 1 cup Supertums Banana Vanilla Overnight Oats
  • 1 ripe banana – mashed
  • 3/4 cup plant-based milk (almond/oat/soy)
  • 1 tsp baking powder
  • 1/4 tsp ground cinnamon (optional)
  • 1/2 tsp vanilla extract
  • 1 tbsp maple syrup or jaggery (optional)
  • 1 tbsp chia seeds (for binding and fiber)

👩‍🍳 Instructions

  1. Preheat your oven to 180°C (350°F). Line or lightly grease a muffin tray.
  2. In a mixing bowl, combine Supertums oats, mashed banana, milk, vanilla, and sweetener if using. Mix well.
  3. Add baking powder, cinnamon, and chia seeds. Stir until fully incorporated.
  4. Let the mixture sit for 5 minutes to thicken slightly.
  5. Spoon into muffin cups, filling 3/4 full. Optional: top with a banana slice or sprinkle of cinnamon.
  6. Bake for 18–22 minutes or until golden and a toothpick comes out clean.
  7. Cool slightly and enjoy warm or chilled. Store leftovers in the fridge for up to 3 days.
