Berries Oat Bread
A fiber-rich, gut-loving loaf made with Supertums oats and juicy berries. Perfect for breakfast or a snack.
📝 Ingredients
- 1½ cups Supertums Oats – ground into flour
- ½ cup rolled Supertums Oats (not ground)
- 2 eggs or flax eggs (2 tbsp flaxseed + 6 tbsp water)
- ⅓ cup plant-based milk (almond, oat, or hemp)
- ¼ cup nut butter (peanut, almond, or sunflower seed)
- ¼ cup maple syrup or mashed ripe banana
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1 cup fresh or frozen mixed berries (blueberries, raspberries, strawberries)
- Pinch of salt
👩🍳 Instructions
- Preheat oven to 180°C (350°F) and line a loaf tin with parchment paper.
- Grind 1½ cups of Supertums oats into a fine flour using a blender.
- In a large bowl, mix oat flour, whole oats, baking powder, and salt.
- In a separate bowl, whisk together eggs (or flax eggs), milk, nut butter, maple syrup (or banana), and vanilla.
- Combine wet and dry ingredients. Gently fold in the berries.
- Pour the batter into the prepared loaf tin and smooth the top.
- Bake for 40–45 minutes or until a toothpick comes out clean.
- Let it cool in the pan for 10 minutes, then transfer to a wire rack.
