Berries Oat Bread

A fiber-rich, gut-loving loaf made with Supertums oats and juicy berries. Perfect for breakfast or a snack.

📝 Ingredients

  • 1½ cups Supertums Oats – ground into flour
  • ½ cup rolled Supertums Oats (not ground)
  • 2 eggs or flax eggs (2 tbsp flaxseed + 6 tbsp water)
  • ⅓ cup plant-based milk (almond, oat, or hemp)
  • ¼ cup nut butter (peanut, almond, or sunflower seed)
  • ¼ cup maple syrup or mashed ripe banana
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen mixed berries (blueberries, raspberries, strawberries)
  • Pinch of salt

👩‍🍳 Instructions

  1. Preheat oven to 180°C (350°F) and line a loaf tin with parchment paper.
  2. Grind 1½ cups of Supertums oats into a fine flour using a blender.
  3. In a large bowl, mix oat flour, whole oats, baking powder, and salt.
  4. In a separate bowl, whisk together eggs (or flax eggs), milk, nut butter, maple syrup (or banana), and vanilla.
  5. Combine wet and dry ingredients. Gently fold in the berries.
  6. Pour the batter into the prepared loaf tin and smooth the top.
  7. Bake for 40–45 minutes or until a toothpick comes out clean.
  8. Let it cool in the pan for 10 minutes, then transfer to a wire rack.
