Berries Oats Muffins

📝 Ingredients

  • 1 cup Supertums Berries Overnight Oats
  • 1/2 cup oat flour
  • 1/4 cup lactose-free yogurt (or coconut yogurt)
  • 1/4 cup maple syrup or jaggery powder
  • 1/4 cup lactose-free milk (or almond milk)
  • 1 tbsp olive oil or coconut oil
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract
  • Handful of low-FODMAP berries (blueberries, strawberries)

👩🍳 Instructions

  • Preheat oven to 180°C (350°F). Line a muffin tray with paper cups.
  • In a bowl, mix Supertums Berries Oats, oat flour, baking soda, and baking powder.
  • In another bowl, whisk yogurt, maple syrup, oil, milk, and vanilla.
  • Combine wet and dry ingredients into a thick batter. Gently fold in berries.
  • Spoon into muffin cups and bake for 18–20 minutes until golden and cooked through.
  • Cool slightly and enjoy warm or store in an airtight container.
