- 1 cup Supertums Berries Overnight Oats
- 1/2 cup oat flour
- 1/4 cup lactose-free yogurt (or coconut yogurt)
- 1/4 cup maple syrup or jaggery powder
- 1/4 cup lactose-free milk (or almond milk)
- 1 tbsp olive oil or coconut oil
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
- Handful of low-FODMAP berries (blueberries, strawberries)
👩🍳 Instructions
- Preheat oven to 180°C (350°F). Line a muffin tray with paper cups.
- In a bowl, mix Supertums Berries Oats, oat flour, baking soda, and baking powder.
- In another bowl, whisk yogurt, maple syrup, oil, milk, and vanilla.
- Combine wet and dry ingredients into a thick batter. Gently fold in berries.
- Spoon into muffin cups and bake for 18–20 minutes until golden and cooked through.
- Cool slightly and enjoy warm or store in an airtight container.
